CREPES!!!!!! =) I haven’t made crepes for 4 years, since culinary school. I didn’t mess up at all, so, I’m incredibly pleased with myself.
Anyway, these are berry citrus crepes. I made crepes, covered them with fresh creme chantilly (whipped creme). I then folded them in halves, topped them with the berries that I soaked in a lemon zest simple syrup, and folded them into a quarter. I dusted them lightly with powdered sugar, piped on a creme chantilly rosette, topped with fresh orange zest and a blackberry. I then drizzled a little of the syrup in between with crepes with some loose berries, and nestled a blackberry in candied orange zest for the center.
