I wanted to make a rainbow looking meal cause it sounded like fun. I made a rainbow disk made out of stir fried red cabbage, spinach, saffron rice, stir fried carrots and red bell pepper. I used that disk in a meal topped with chile con pollo, one piece being spinach serrano chicken and the other being tomato chile de arbol chicken. I have rainbow colored sautéed vegetables on the side, as well. Then the pastry chef in me decided to pipe a cute flower on a savory dish plate. I used a tomato chile de arbol sauce, spinach serrano sauce, red cabbage sauce, and a peppercini sauce (all sauces strained through a shinwa). There’s also a little red cabbage butterfly on the chicken.
